When I was given the opportunity to receive a copy of Pam Anderson’s latest book for review I was excited and nervous; excited because it is Pam Anderson and I love her books, nervous because it is called Cook without a Book, Meatless Meals. Though meatless isn’t a problem for me, my husband is a card-carrying meat-craving protein-snarfing carnivore. I would have to start out gently.

First of all, I love all of Pam’s breakfast suggestions. I tend to get stuck in a breakfast rut – healthy cold cereal and skim milk, every single day. I was inspired by her savory wrap-and-runs to scramble up some eggs with leftover spinach salad. I didn’t manage to actually wrap it up in a tortilla but for me especially on a weekday, it was a leap. It was easy, quick, and tasty and I am pretty sure it kept me fuller way longer than my usual.

But that was just for me. To ease my husband into trying anything, I started with a soup. (Shhhh – I served it with a sandwich with meat in it. Don’t tell Pam! ;-))

I still had some beautiful carrots and parsnips left from my CSA and decided to roast them for Creamy Roasted Vegetable Soup. Okay, shhhhh again – Pam says to choose just one vegetable for roasting but I chose two! Parsnips and carrots go so well together – plus my husband thinks he doesn’t like parsnips so if I hide them with the carrots everybody’s happy.

And in the end, we were very happy indeed. The soup was delicious, and Mr. Carnivore even liked it, though I kept him sated with the meaty sandwich on the side. My next challenge will be to make one of the heartier meals in the book and see if I can keep him from asking, “Where’s the meat?”

I am thinking this soup would make a worthy addition to your Thanksgiving menu, with the gorgeous orange color and unexpected carrot (instead of squash) flavor. But, it’s easy enough for everyday. Just make it soon and start slurping those veggies!

I need a copy of this book! My bf is just like your husband: he NEEDS meat with every meal, while I am meatless all the time. Soup looks delicious, love the addition of curry :)

I haven’t tried that one yet. The Mistah and I took quite a shine to the tortellini soup.

Great pairing the parsnips with the carrots for a fragrant combination of root vegetables in this comforting autumn soup. Adore the “master formula” concept; this cookbook is for me!
