No-Fuss Chicken Cacciatore

Days 4 and 5

Within the No-Shopping Suppers chapter of The Complete Quick Cook, there is a two-page spread called 6 Things To Do with Bottled Marinara Sauce. Yeah, bottled. You got something to say about that? Look, I’ve already explained. I buy marinara in a jar. Every now and then I make my own from some recipe from somebody who knows better than I do what they are doing. But for weeknight dinners, it’s jar stuff all the way. And I am still devoted to my tasty local find – Capa di Roma. So, 6 easy things to do with the jar other than slap it on spaghetti? I’m in.

I tried the No-Fuss Chicken Cacciatore first. It’s kind of ridiculous how easy yet delicious this is. I have to admit I wasn’t so sure as I was cooking it. I mean, chicken, the sauce, pepper strips and mushrooms? That’s it? Is it just going to taste like a sad, cheese-less chicken parm?

In fact, no. Somehow, this is one of those wholes that is way greater than the sum of its parts. It’s like some sort of magic happens while it simmers away in the pan, or maybe it’s just that really good marinara. Do yourself a favor and try this one – buy some good marinara or make your own, if you insist on being fancy. This simple little recipe was actually our favorite of the no-shopping suppers!

Oh, and on day 5, I used the rest of the sauce to make Quick Minestrone! Add some chicken broth, beans, frozen chopped veggies and season to taste. Suddenly you’ve got soup. Now you know what to do with those sauce leftovers when you admit you buy the jar too!

I have yet to make a decent marinara. That’s why you’ll see a jar or two of sauce in my pantry. Now that you way how good this is, maybe I’ll have to pull one of those jars out and put it to use.
